El Faro displayed sherry’s lesser-known features at Vinoble 2008

If any element should be pointed out as the hallmark of Cádiz gastronomy exclusive profile, that is undoubtedly sherry wines. Despite this importance and due to a long tradition and the strong personality of our wines, they have been often undervalued or limited to accompany snacks or desserts. Therefore, their qualities are also frequently ignored, especially in relation to the latest creations which include slightly acid and vinegary dishes.
For this reason, El Faro Catering has joined to Consejo Regulador Secretary-General’s initiative, Cesar Saldaña, to show these qualities within the International Fair of Wine Vinoble 2008 by matching them up with our local gastronomy, where these wines develop their potential to the full.
Moreover, El Faro Catering has taken advantage of this sixth Vinoble fair to go beyond, as it has also set out to highlight the richness of the aroma that they put on our dishes when used as one of their ingredients. Consequently, all our dishes presented in this fair include any of the D.O. Sherry-Jerez-Xeres’ wines:
Almadraba tuna rolls stuffed with avocado and flavoured with Amontillado sherry
Green apple cold soup with cod, trout roe and a touch fino sherry
Strawberry Bloody Mary with camomile served with skewered melon flavoured with Chipiona moscatel sherry
For us, this contribution is our particular tribute to one of the main sources of our idiosyncrasy and the distinguishing marks of our cuisine. |
